62The modern household pressure cooker was actually invented by the Presto company.
Presto had been making industrial sized pressure cookers (or pressure canners) since 1905 at their base in Wisconsin. Their innovation was to make a saucepan version for the domestic kitchen in 1939, and they quickly folllowed up in 1949 with an electric version.
Pressure cooking works by increasing the boiling point of the water within the saucepan, and thus cooks food much faster as well as having a sterilising effect on anything inside it (such as jam jars or glass baby bottles).
Pressure cookers are great for any foods cooked in liquid that require simmering (such as stews). Steaming vegetables in pressure cookers means that the vitamins don't leach out, making for a healthier meal. Cooking times are frequently faster than microwaves.
